(Makes 1 x rectangular 35 x 11 cm quiche)

  • 1 x baked quiche base of 35 x 11 cm
  • 200 g feta cheese, broken into pieces
  • 2 tomatoes, sliced
  • 1 tin (400 g) artichokes, drained and halved
  • freshly ground black pepper
  • 2 eggs
  • 250 ml cream

Heat oven to 180 ºC. Spread feta cheese on pastry base. Arrange tomatoes and artichokes on top. Season with black pepper. Whisk eggs and cream and pour over filling. Place tin on a baking tray and put in oven. Bake for 35 to 40 minutes until filling has set.
