(serves 4)

  • 400 g chicken breast strips
  • 60 ml olive oil
  • Juice of 1 lemon
  • 1 clove of garlic, crushed
  • Around 12 baby potatoes
  • Salt and freshly ground black pepper to taste
  • 200 ml mayonnaise
  • 30 ml whole grain mustard
  • 1 pillow pack (80 g) fresh rocket
  • 2 avocados, thinly sliced

Put chicken in a bowl and pour over the olive oil, lemon juice and garlic. Let stand for about 5 minutes. Boil potatoes until soft and remove skin once cooled. Slice. Heat a pan and cook chicken until browned and done. Season with salt and black pepper. Combine mayonnaise and mustard. Arrange rocket, chicken, potato slices and avocado in layers on a serving dish. Serve with mustard mayonnaise.
