serves 4 – 25 minutes

  • 50 ml sunflower oil
  • 2 onions, halved and cut into wedges
  • 6 cloves of garlic, finely chopped
  • 2 red chillis, chopped
  • 15 ml brown sugar
  • 15 ml fresh ginger
  • 15 ml lemon juice
  • 2 big handfuls fresh basil
  • 700 g steak, cut into thick strips
  • 30 ml fish sauce
  • 15 ml lemon juice
  • salt and freshly ground black pepper

Heat sunflower oil in a wok or pan with a heavy base. Sauté onions, garlic, chilli, brown sugar and ginger for about 1 minute. Add lemon juice and basil and cook for another minute. Take mixture out of the pan. Put beef strips in the pan and cook for about 10 minutes. Add onion mixture and season with fish sauce, lemon juice, salt and black pepper. Cook for another 2 minutes and serve.
