Chocolate milk tart
I adapted the filling of the winning milk tart in SARIE KOS of Autumn 2009 (issue 6) by adding quality dark chocolate and replacing the puff pastry with phyllo pastry. If you likechocolate, you’ll love this!
This is my version of a chocolate milk tart
Enough for 1 milk tart
• 4 leaves of phyllo pastry
• about 50 g (55 ml) butter, melted
• 42 g (75 ml) cake flour
• 25 g (50 ml) cornflour
• 40 g (50 ml) sugar
• 125 ml milk
• 2 egg yolks
• 20 g (25 ml) sugar
• 7 ml vanilla essence
• 2 egg whites
• ½ ml cream of tartar
• 20 g sugar
• 550 ml milk
• 10 ml butter
• 200 g 70% dark chocolate, broken in pieces
Heat oven to 220 °C. Place one sheet of phyllo pastry on a work surface and brush with melted butter. Place another sheet on top and brush with butter again. Repeat the process with the remaining pastry. Place pastry in greased oven tray or pastry dish of 25 cm in diameter. The pastry should stick out over the top of the dish. Cut extra pastry off with a pair of scissors. Place cake flour, cornflour, 40 g sugar and 125 ml milk in a medium-sized mixing bowl and mix until smooth. Set aside.
Whisk egg yolks, 20 g sugar and vanilla essence in a small bowl and set aside. Put egg whites, cream of tartar and last 20 g sugar in a mixing bowl. Set aside. Put 550 ml milk, 10 ml butter and chocolate in a saucepan and heat until the chocolate has melted. Pour
hot milk-chocolate from saucepan into mixing bowl with flour mixture. Mix well and pour back into saucepan. Heat over a low heat while stirring constantly. Once mixture has thickened, pour it back into the mixing bowl and stir in egg yolks. Whisk egg white mixture until it forms stiff peaks and carefully fold in. Pour into lined tray or dish. Place in hot oven. Bake for 5 minutes. Turn temperature down to 200 ºC and place a piece of parchment paper or tinfoil on top of tart to prevent pastry from burning.
Bake for a further 15 minutes. Remove and allow to cool. Serve at room temperature.
Milk tart with a touch of chocolate, and caramel pudding with raspberries... it's high time the old favourites got an update !
