(About 2 litres)
- 200 g (250 ml) sugar
- 250 ml water
- 250 ml granadilla pulp (about 10 granadillas)
- juice and zest of 4 lemons
- 500 g ice
- 2 litres cold soda water
Bring sugar and water to the boil over medium heat, and simmer for about 8 minutes until the sugar has melted. Add granadilla pulp and the lemon juice and zest. Cook for another 2 minutes. Remove from heat and allow to cool until cold. Wrap ice in a clean kitchen towel and break into fine pieces, using a cake roller. Place in a large jug with the cold syrup. Add soda water and serve.
HINT: If you use Sprite instead of soda water, the drink will be sweeter.
