makes about 500 ml

  • 500 ml buttermilk
  • 1 handful fresh herbs of your choice – like basil, origanum, parsley
  • 15 lemon juice
  • 15 ml honey
  • salt and freshly ground black pepper

Puree the buttermilk with the chopped herbs in a food processor. Season with salt and pepper and add lemon juice and honey to taste. Serve with runner bean stew, as salad dressing or use any time you would normally use mayonnaise.
