(6 to 8 portions)

  • 500 ml dry lentils
  • 30 ml olive oil
  • 4 chorizo sausages, sliced
  • 1 red pepper, cut into small cubes
  • 1 yellow pepper, cut into small cubes
  • 1 red chilli, sliced
  • 1 green chilli, sliced
  • salt and freshly ground black pepper to taste
Place lentils in a saucepan. Pour cold water over lentils and make sure they are well covered. Bring to the boil and boil until soft. This will take about 45 minutes to an hour. Don't add any salt when cooking lentils, as then the lentils won't become soft. Drain and allow to cool. Heat olive oil in a pan and fry sausage slices for about 10 minutes. Now mix all the ingredients and season with salt and pepper. Serve with salad dressing. Salad dressing:

  • 180 ml olive oil
  • 60 ml lemon juice
  • 2 cloves of garlic
  • 15 ml wholegrain mustard
  • salt and freshly ground black pepper to taste

Mix everything together well.
