(Serves 6) Crust

  • 1 box peppermint flavoured chocolate cookies
  • 55 g (60 ml) butter, melted
Finely chop the cookies in food processor. Add butter and combine well. Press mixture into a bowl of about 20 cm, 6 cm deep. Keep to one side. Filling

  • 3 sheets of gelatin or 10 ml granulated gelatin
  • 1 can of caramel
  • 250 g mascarpone
  • 250 ml cream
  • 200 g peppermint flavoured chocolate, grated

Soak gelatin in cold water for about 5 minutes. Put caramel in a mixing bowl and stir to smooth. Add mascarpone and beat well. Beat cream and fold whipped cream into mixture. Fold in grated chocolate. Melt gelatin over hot water or in the microwave. Add to mixture and mix well. Pour into lined bowl and refrigerate overnight. Serve with chocolate curls if you like.
