Oven-baked steaks with mushrooms and peppers
- about 60 ml olive oil
- 8 minute steaks
- 250 g white mushrooms, sliced
- 1 red pepper, seeded and cut into strips
- 1 lemon
- salt and freshly ground black pepper to taste
Heat oven to 180 °C. Heat half the olive oil in a pan and fry steaks on both sides until just brown. Place in ovenproof dish. Arrange mushrooms and strips of red pepper on top. Squeeze the juice of half a lemon over the top, and season with salt and pepper. Pour rest of the olive oil over the other ingrediens and place in oven. Bake for 30 to 35 minutes until meat is tender. Serve with rest of the lemon.
HINT: For extra flavour, add 250 g streaky bacon, cut into cubes.
