  • 8 slices white bread toast
  • 8 slices mozzarella
  • 16 small rosa tomatoes, sliced
  • 100 g black olives, stoned and halved
  • 8 anchovy fillets
  • freshly ground black pepper to taste
  • handful of fresh basil leaves

Heat the grill of your oven. Arrange the toast on a baking tray. Put a slice of cheese on every slice, then tomato slices, olives and an anchovy fillet. Season with black pepper. Grill until the cheese is just melted. Remove and sprinkle with the basil.
