(serves 6)

  • 30 ml olive oil
  • 1 onion, finely chopped
  • 10 slices of white bread, crusts removed
  • 600 g pork sausages
  • 15 ml parsley, chopped
  • 1 egg, beaten
  • salt and freshly ground black pepper to taste
  • 250 g streaky bacon
  • watercress
  • 6 bread rolls of your choice

Preheat your oven to 180 °C. Heat half the olive oil in a pan. Fry the onion until soft and translucent. This will take 2 or 3 minutes. Finely chop the bread in your food processor. Take the meat out of the sausage casings. Combine the onion, bread, meat, parsley and egg and season with salt and pepper. Wet your hands and form the patties. Heat the rest of the olive oil in a pan and fry the burgers on both sides for 2 or 3 minutes. Put the patties on a baking tray and bake for 6 minutes. Put the bacon on a baking tray and cook in the oven until crisp. Put fresh watercress on the bottom slices of the bread rolls. Place a patty on top and then some crisp bacon. Serve with french fries.
