serves 4 – 30 minutes

  • 4 pita breads
  • 300 g mozzarella, sliced
  • 250 g small rosa tomatoes, halved
  • 2 wheels of feta, broken into chunks
  • handful of fresh basil leaves, roughly broken
  • olive oil
  • freshly ground black pepper

Preheat oven to 240 °C. Put pita breads on a baking tray. Bake for about 10 minutes. Take out and put mozzarella on each one. Arrange tomato halves on top and sprinkle with feta and basil.  Sprinkle with a bit of olive oil and season with black pepper. Bake until cheese is melted and brown.
