Rice pudding with caramel sauce
- 250 ml arborio rice
- 1 cinnamon stick
- 1 vanilla pod
- 800 ml milk
- 110 g (130 ml) caster sugar
- fine cinnamon to sprinkle on top
Put all the ingredients in a pot, bring to the boil and stir until sugar is dissolved. Simmer until rice is tender. It takes about 45 minutes. Spoon into bowls and dust with cinnamon. Serve with caramel sauce.
170 g fudge, broken into chunks
125 ml cream
Put fudge and cream in a saucepan over low heat and stir now and then until fudge has melted.
