serves 6

  • 300 g (535 ml) cake flour
  • 10 ml baking powder
  • 3 ml salt
  • 45 g (50 ml) butter
  • 1 egg, beaten
  • 150 ml milk
  • about 30 ml apricot jam

Sauce

  • 200 g (250 ml) sugar
  • 25 ml butter
  • 500 ml water
  • 50 ml lemon juice
  • 25 ml golden syrup
  • pinch of salt

1. Preheat oven to 180 ºC. Sieve the dry ingredients together. Rub the butter in. Beat the egg and milk together. Add to the dry ingredients and mix to form a stiff dough. Roll on a surface sprinkled with flour, roughly in a rectangular shape. Smear the jam on top.

2. Roll as if making a jam roll. Cut into slices of 2,5 cm and arrange them, cut sides down, in a buttered oven dish of about 30 x 15 cm.

3. Combine ingredients for sauce and bring to the boil. Pour hot sauce over the dough slices. Bake for 1 hour. Serve with custard.
