(Serves 4)

  • 5 rooibos teabags
  • 1,3 litre boiling water
  • 100 g (125 ml) sugar
  • 3 green apples, quartered
  • Handful fresh mint leaves
  • 3 whole sticks of celery
  • 2 lemons, quartered
  • Ice

Let the teabags steep in the just-boiled water for 5 minutes. Add sugar and stir well. Let cool. Pour tea in a large jug and add apple quarters, mint, celery, lemon quarters and ice.
