(Serves 1 - 2)

  • 60 ml self-raising flour
  • 60 ml sugar
  • 30 ml cacao
  • Pinch of salt
  • 1 egg
  • 45 ml milk
  • 45 ml sunflower oil

Grease a coffee mug (volume 400 ml) using butter or nonstick spray. Put flour, sugar, cacao and salt in the mug. Mix well with a fork. Add egg and mix well. Add milk and oil and mix well. Put mug in the microwave oven for 3 minutes at 100% power. The cake will rise quite a bit. Let stand a few minutes before turning out. Serve with whipped cream and red currants. Great warm with ice cream, too.
