(12 cupcakes)

  • 3 eggs
  • 175 g (210 ml) caster sugar
  • 175 g (312 ml) self-raising flour
  • 175 g (190 ml) butter at room temperature
  • 5 ml vanilla essence
  • 2 ml ground cinnamon
  • 1 green apple, peeled and grated

Heat oven to 180 °C. Line cupcake tins with paper cases and spray well with non-stick spray. Place all the ingredients (but not the grated apple) in the bowl of an electric mixer. Whisk everything together for 3 to 4 minutes. Fold in grated apple and spoon mixture into paper cases. Place in hot oven. Bake for 15 to 20 minutes or until a testing pen comes out clean. Remove and allow to cool before decorating the cupcakes. Line a baking tray with baking paper and spray with non-stick spray. Place apple slices on baking tray and sift icing sugar over the top. Bake for 1 hour at 120°C or until crisp. Spoon cream cheese icing over cupcakes and sift cinnamon over the top. Decorate with apple slices.
