• 500 g dry butter beans
  • 50 ml sugar
  • 100 ml vinegar
  • 45 ml butter
  • salt and freshly ground black pepper to taste

Put beans in bowl and cover with cold water. Soak overnight. Drain and put in saucepan. Cover with water and bring to the boil. Boil until soft. Most of the water should have evaporated. Crush some of the beans slightly and add other ingredients. Season with salt and pepper. Taste and add more vinegar and sugar if necessary. Serve warm.
