Use a bread pan of 18 x 10 cm.

  • 120 g (130 ml) butter
  • 150 g (160 ml) sugar
  • 2 eggs
  • 4 ripe bananas
  • 15 ml lemon juice
  • 240 g (430 ml) cake flour
  • 2 ml salt
  • 5 ml baking soda
  • 30 ml milk

Preheat your oven to 180 °C. Beat butter and sugar together in your electric blender until light and creamy. Add eggs one by one and beat well after each. Puree the bananas in your food processor and add lemon juice. Sift together the dry ingredients and add them, alternating with the milk mixture, to the butter mixture. Spoon batter into a well-greased bread pan. Bake for 1 hour. Test with a thin skewer – it should come out dry – before you take the bread out the oven.
