(4 to 6 portions, 30 minutes)

  • 45 ml olive oil
  • 4 chicken breasts (500 g)
  • baking paper
  • 200 g green beans
  • 200 g feta, broken into chunks
  • juice and zest of 4 lemons
  • salt and freshly ground black pepper

Heat oven to 180 °C. Heat a griddle pan until piping hot. Sprinkle chicken breasts with olive oil and seal in hot griddle pan, about 1 minute on each side. Make paper bags from baking paper: Fold a rectangle of 45 cm lengthwise. Fold over the 2 short sides 4 times (1 cm per fold). Press down firmly and place on baking tray. Divide green beans between 4 bags, followed by feta. Put a chicken breast on each. Squeeze lemon juice over chicken. Season well with salt and black pepper. Fold the last open side shut. Bake for 15 to 20 minutes, or until chicken is cooked. Tear open bags and serve. You can prepare everything ahead of time and keep it in the refrigerator.
