(About 24 squares of 4 x 4 cm)

  • 500 g dark chocolate
  • 250 g butter
  • 6 eggs, separated
  • 325 g brown sugar
  • 70 g cake flour
  • 125 ml strong coffee
  • 30 g cacao
  • 50 g white chocolate shavings
Preheat oven to 180 °C. Line a greased square-ish bowl of 20 x 15 cm with baking paper. Finely chop the dark chocolate and melt it with the butter in a bowl over hot water. Beat egg yolks and sugar (preferably with an electric beater) in a bowl over just-boiled water until thick and light of colour. Add chocolate and butter, then the flour, coffee and cacao. Beat egg whites and fold in. Pour into lined, greased bowl. Bake for 30 minutes. Take out of oven and allow to cool. Cut into squares and cover with ganache. Decorate with white chocolate shavings.   • 500 ml cream
  • 1 kg dark chocolate

Melt the two ingredients in a pot over very low heat. Allow to cool before use.
