  • 200 g (625 ml) desiccated coconut
  • 70 g (83 ml) caster sugar
  • 30 ml self-raising flour, sifted
  • 1 egg, beaten
  • 62 ml milk
  • 2 ml vanilla essence

Preheat your oven to 180 °C. Put the coconut, caster sugar and self-raising flour in a mixing bowl. Add the beaten egg, milk and vanilla. Mix well. Form balls of about 2 cm. Put them on a baking tray lined with tinfoil (you don’t need to butter the foil). Bake for 20 – 25 minutes.
