  • 125 g (135 ml) butter
  • 100 g (125 ml) brown sugar
  • 1 egg yolk
  • 350 g (625 ml) cake flour
  • 5 ml baking soda
  • 15 ml ground ginger
  • 40 ml golden syrup

Preheat your oven to 180 °C. Line a baking tray with baking paper. Cream the butter and brown sugar with an electrical mixer until light and fluffy. Add the egg yolk and beat well. Sift the cake flour, baking soda and ginger together. Gradually add the dry ingredients and syrup to the butter mixture, mixing well after every addition. Knead the dough well on a work surface. Roll the dough out between two layers of wax paper to about 3 mm thick. Cut the men with a cookie cutter and place them on the lined baking tray. Bake for 10 minutes.
