(Makes about 24)

  • 140 ml honey
  • 150 g (190 ml) brown sugar
  • 30 ml butter
  • 50 g sesame seeds
  • 100 g sunflower seeds
  • 100 g walnuts, roughly chopped
  • 100 g raisins
  • 300 g (245 ml) rolled oats
  • 100 g 70% chocolate, melted

Mix honey, brown sugar and butter in a medium-sized saucepan. Bring to the boil and simmer slowly for about 10 minutes. Stir every minute to prevent it burning. Line a pan (23 x 32 cm) with baking paper and spray with non-stick spray. Remove honey syrup form the heat and add seeds, nuts, raisins and oats. Mix quickly and thoroughly. Press mixture down firmly in pan while it's still warm. Cover with baking paper, followed by another baking tray. Put something heavy like tins of food on the top tray so that it presses down firmly. Allow to cool. Turn out and cut into bars (the size depends on your preference). Place on cooling rack and drizzle melted chocolate over the top. Allow to cool. Store in airtight containers. The mixture may look dry when you add the syrup, but don't worry - just mix it thoroughly.
