This recipe is especially useful if you have an excess of tomatoes. Put the dried tomatoes in olive oil and store in the refrigerator.
- large rosa tomatoes, halved
- 400 g small rosa tomatoes, kept whole
Heat oven to 120°C. Place tomatoes cut side up on a baking tray that has been lined with baking paper. Leave in oven overnight. Squeeze some of the juice from the large tomatoes. Heat grill to a low temperature. Grill tomatoes for about 1½ hour. If you want to dry the smaller tomatoes, leave them in the oven overnight. Do not dry them under the grill.
