(Makes about 8-10)

  • 200 g (360 ml) cake flour
  • 10 ml baking powder
  • 15 ml sugar
  • 3 ml salt
  • 2 eggs
  • 125 ml milk
  • 500 ml sunflower oil for frying

Sift flour, baking powder, sugar and salt into a mixing bowl. Beat eggs and milk together. Gradually add egg mixture to dry ingredients and mix well. Heat oil in a deep pan. Dip a tablespoon in the oil and spoon up some of the batter. The batter should come off the spoon easily, thanks to the oil. Fry vetkoeke until golden brown and drain on kitchen paper.
