• 500 g unsalted butter
  • 500 g cake flour
  • 250 ml soda water
  • 15 ml brandy or lemon juice
  1. Cut butter into cubes.
  2. Sift the flour and add the butter. Mix through slightly. Add soda water and brandy or lemon juice.
  3. Form a dough. Cover with cling wrap and refrigerate for 30 minutes.
  4. Begin rolling the dough in one direction on a surface sprinkled with flour.
  5. Fold the dough from back to front. Brush off the excess flour.
  6. Fold the dough from the side to the middle, and repeat process until all the butter is worked in. Let the dough rest in the fridge after every second roll – it has to stay cold.
