If you’re making sandwiches for lunch or a picnic, make a few extra and use the leftovers to make this easy and delicious alternative to French toast.

Serves 6 | Preparation time 15 minutes plus resting time | Baking time 30 minutes

You need
• 4 tablespoons butter
• about 12 slices of bread
• 6 slices of ham
• 12 slices of cheddar
• 1 tomato, in slices
• 5 eggs
• ¼ cup milk or cream
• 3 tablespoons Dijon mustard
• pinch of ground black pepper
• pinch of salt

Here’s how
1 Grease an oven dish (33 x 23 cm) with butter. Spread the rest of the butter on the bread.
2 Layer half the slices in the oven dish with the buttered side facing down. Now add a layer of ham, cheese and tomato. Put the rest of the bread slices on top, with the buttered side facing up.
3 Beat the eggs, milk, mustard, and salt and pepper together. Pour this mixture over the bread. Cover the dish with cling wrap and refrigerate overnight.
4 Preheat the oven to 180° C. Bake for 30 minutes. Serve hot with a green salad or use cold slices for padkos.
