Hearty lentil and tomato stew

If you are looking for a hearty and easy recipe this quick sausage, lentil and tomato stew is for you.

It also doesn’t break the bank.Ingredients:

1 tablespoon oil

1 onion, halved, thinly sliced

1 red bell pepper, finely chopped

500 g sausages, cut into 1 cm pieces

800 g cooked brown lentils

2 cups slow-roasted tomatoes, roughly chopped

1 1/2 cups chicken liquid stock

2 tablespoons fresh parsley leaves, chopped, plus extra leaves to serve

2 tablespoons fresh coriander leaves, chopped, plus extra leaves to serve

Parmesan, grated, to serve

Sour cream, to serveMethod:

Heat oil in a large deep frying pan over medium-high heat. Add onion and bell pepper.

Cook, stirring, for 5 minutes or until onion is softened. Add sausages.

Cook, breaking up with a wooden spoon, for 8 minutes or until browned.

Add lentils, tomato and stock. Stir. Bring to the boil. Reduce heat to low. Simmer for 8 to 10 minutes or until mixture thickens. Season. Stir in parsley and coriander.

Sprinkle with Parmesan and extra parsley and coriander.

Serve with sour cream.
